A match made in heaven - banana + chocolate. What more could you ask for?
When I make these, they probably should be could be called banana triple choc muffins as I always always ALWAYS overdo the choc chip (accidentally on purpose).
I stick with just the good old standard choc chips but you could instead use white, dark or caramel choc chips, heck you could even combine some of the different flavours if you wanted to.
- 2 cups self raising flour
- 1/2 cup caster sugar
- 1 cup mashed banana
- 1/2 cup choc chips
- 3 eggs, lightly beaten
- 85g butter, melted
- 1/3 cup buttermilk
- Preheat oven to 180°C. Line a 12 hole muffin pan with either paper cases or use silicone cases.
- Sift flour into a large bowl. Stir in sugar, bananas, choc chips, eggs, butter and buttermilk. Do not overmix batter as it should be lumpy.
- Spoon mixture evenly into prepared muffin pans. Cook for 15-20 minutes or until cooked when tested with a skewer. Place on a wire rack to cool.
